Dinner

Tonight I wanted something simple.  This is a quick dinner for two with very little effort!

Seared Sashimi Tuna with Pineapple Salsa; Roasted Cauliflower Mashed; Small Mixed Green Salad

Start with the Cauliflower as it takes the longest time.

1 whole head cauliflower
Olive Oil cooking spray
1 TBS olive oil
1/2 TBS garlic powder
2 tsp sea salt
1 tsp freshly ground pepper
2 tsp Butter Buds
2 TBS nonfat Greek yogurt

Spray glass pie plate with cooking spray.  Cut the green stem and leaves from the cauliflower, keeping the cauliflower head in tact.  Place in the pie plate and drizzle with olive oil.  Sprinkle with next 3 ingredients.  Preheat oven to 450 degrees.  While the oven preheats place the cauliflower, covered in plastic wrap, in the microwave for 6 minutes.  (This is when you start your tuna)  Remove the cauliflower from the microwave and place in hot oven.  Roast for 10 minutes or until top is golden brown.  Carefully put hot cauliflower in blender or food processor.  Add Butter Buds and Greek yogurt. Pulse until you get a smooth, mashed potato-like, texture.


2 half lb. Sashimi Tuna filets
Olive Oil cooking spray
2 tsp. freshly ground pepper
2 TBS sesame seeds
1/4 c. pineapple salsa (store bought)

Spray a heavy duty pan with the cooking spray.  Place the tuna filets in the pan.  Evenly sprinkle each side of each filet with the ground pepper and sesame seeds.  I find that pressing the sesame seeds into the tuna helps keep them in place.  Cook on medium heat for approximately 5 minutes each side for rare filets.  Remove from pan and serve with pineapple salsa.

Serve your tuna and roasted cauliflower with a side salad of mixed greens and choice of dressing.  This is a great, super quick dinner that is healthy and elegant!
